My Favorite Protein Packed Rainy Day Dinner

If you live in the northeast you are probably dealing with this nasty rain over the past two weeks.

 

Sick of it yet? I know I am!

 

Oftentimes when we think of comfort food we think of food that is higher in fats, carbs, and lower in veggies and protein. Notice how I didn’t say “bad food”, that’s because there is no such thing!

 

While it’s completely cool to sometimes enjoy those comfort foods, today I want to share with you one of my favorite recipes that is loaded with veggies, protein, and satisfies that comfort food craving.

 

Veggie Turkey Bolognese w/ Chickpea Pasta

 

Step 1) Chop up all vegetables as finely as you would like (I prefer bigger chunks because I enjoy the texture)

Step 2) Spray a non-stick pan with Olive Oil

Step 3) Saute veggies on medium-high for 3-5 minutes (Longer if you like them softer)

Step 4) Add ground turkey to the pan and break up into small pieces as the turkey cooks

Step 5) One the turkey is browned lower to a simmer, add in red sauce and vodka sauce and let simmer

Step 6) Bring a pot of water to a boil

Step 7) Add in pasta and cook following instructions on the box

Step 8) Once pasta is cooked, drain water, add pasta to the sauce and mix well

Step 9) Add fresh mozzarella or you favorite cheese (optional)

 

Feel free to take this recipe and get creative with it! Add or substitute anything you would like!
